David Herv√©‚Äôs fresh Boudeuse oys¬≠ters are sweet and crisp, ap√©ri¬≠tif-per¬≠fect, a gem of a sur¬≠prise. They come from the Marennes-Ol√©ron Basin, the cen¬≠ter of oys¬≠ter farm¬≠ing in Europe.


The Boudeuse are regard¬≠ed as stub¬≠born lit¬≠tle oys¬≠ters, grow¬≠ing in the part of the Atlantic where the undu¬≠la¬≠tions of the waves slow their growth. They are small and round in shape, hid¬≠ing with¬≠in them a trove of crisp and sweet fla¬≠vors just wait¬≠ing to be dis¬≠cov¬≠ered on a culi¬≠nary journey. 


The sim¬≠plest way to enjoy oys¬≠ters is fresh¬≠ly shucked, kept chilled on a bed of ice, and tak¬≠en with just a squeeze of lemon. If lemon juice isn‚Äôt enough, you can always sprin¬≠kle a dash of pep¬≠per and spoon a lit¬≠tle cock¬≠tail sauce or mignonette sauce (red wine vine¬≠gar with pep¬≠per and minced shal¬≠lots). For those who pre¬≠fer their oys¬≠ters cooked, bak¬≠ing them with cheese and oth¬≠er top¬≠pings still allows you to enjoy their fresh taste.

They own about 3 hectares of marine space, ben¬≠e¬≠fit¬≠ing from the ebb and flow of the Atlantic cur¬≠rents, and allow¬≠ing them to main¬≠tain the strictest and high¬≠est stan¬≠dards of oys¬≠ter farming.

Storage Instructions

Store your box of fresh, unshucked oys¬≠ters in your fridge, keep¬≠ing the tem¬≠per¬≠a¬≠ture between 0 to 5¬įC. Keep them cov¬≠ered with a damp cloth, flat side up, to increase shelf-life. To enjoy them at their fresh¬≠est, please con¬≠sume them with¬≠in 48 hours.

When you‚Äôre ready to shuck your oys¬≠ters, take a sharp knife (a veg¬≠etable knife or, ide¬≠al¬≠ly, an oys¬≠ter shuck¬≠ing knife) and hold the oys¬≠ter, round-side down and point¬≠ed side fac¬≠ing you, between a tea tow¬≠el. Wig¬≠gle the knife into the pointy end and twist it until the shell comes open.
