Axuria prides itself on its IGP and Label Rouge suckling lambs. These lambs are bred using a centuries-old tradition, and are fed exclusively their mother’s milk. They receive no nutritional supplements and treatments, and are never older than 45 days. Because they are fed only their mother’s milk, the ewes must therefore have a very specific and organic diet. The ewes graze for at least eight months in a year. They begin in the pastures of the Pyrenean mountains, and when fall comes along, they graze in the nearby valleys, in lower altitudes. And when they are in the sheepfold, they are fed all-organic cereal grains and feed.
The Axuria Organic Epaule Agneau de Lait is moist and tender, with a light, delicate flavor. It’s well-balanced in taste, and is great for big family meals. Suckling lambs from Axuria are recognized by Label Rouge and IGP labels.
The shoulder of the suckling lamb is great for family meals. It lends itself beautifully to slow-roasting and stewing. Roast it with some garlic, olive oil, and herbs, and serve with some roast potatoes. You can also braise it, or stewed slowly with a red-wine based sauce.
Axuria was born in 1983, when 162 breeders from the Basque mountains decided to assemble and create a cooperative. Its name, Axuria, comes from the Basque dialect, and means “milk-fed lamb.” From the get-go, Axuria’s mission and vision was obvious. Today, there are over 300 breeders from the valleys of the Pyrenees and Basque in this cooperative found in the heart of Basque Country.
