Fresh coriander (wansoy) is an herb that helps balance cholesterol, and is considered a digestive aid. It has a fresh citrusy taste, and a very intense smell.

PREPARATION AND PAIRINGS

Coriander is a very popular ingredient in South American, Vietnamese, and Thai cooking. Try this Thai ground chicken recipe:

  • Cook onions in a pan with oil, garlic, and ginger.
  • Add in ground chicken, and cook halfway. Add in sugar, fish sauce, water, soy sauce, and sriracha.
  • Cook until done.
  • Turn the heat off, and add in scallions and coriander.
  • Toss together. Serve with rice, or lettuce wraps.

Or try this incredible Coriander Chicken Curry:

  • Blitz together some ginger, garlic, lime juice, salt, and water until a smooth paste forms.
  • Rub paste onto chicken thighs that have been slashed at intervals. Cover and marinate for 1 hour, or overnight.
  • Heat oil in a large frying pan, and fry the chicken thighs until browned on all sides.
  • Make a sauce by combining tomato, coriander, chilies, water, and garam masala.
  • Pour sauce onto the chicken, and cook for 10 minutes on medium heat.
  • Stir in some yogurt, cover, and let simmer for another 10 minutes on low heat, until chicken is cooked through.
  • Serve topped with more coriander leaves and chopped green chili.

A CORIANDER BY ANY OTHER NAME

There is a lot of confusion between coriander and cilantro, and that’s mostly to do with language. The word, “cilantro” comes from the Spanish word for coriander, which could be cause for misunderstanding.

Coriander can refer to either the herb or the spice that comes from the plant’s seeds. Cilantro refers to only the herbs.

In the UK and other European countries, there is no distinction. Coriander is both the spice and the herb, and they rarely use “cilantro.” In the US and Canada, however, cilantro refers to the herb, and coriander, the spice.

With produce with high water content, like fresh rocket arugula, you can remove the excess moisture that might accumulate by lining the storage bag with a paper towel and resealing the bag again. Make sure to check on it mid-week, and replace the paper towel once it takes in too much moisture. Done properly, this method can help your produce last to about a week max after opening of bag.
