Hailing from Lombardy, Italy, the Rollino Capra has a creamy taste and texture, and a goaty aroma. Made of goat’s milk, this cheese is spreadable and soft, with a sweet-sour flavor that is full and rich.
Goat’s milk cheese is also lower in fat, cholesterol, and calories. It’s also easier to digest than cow cheeses, making it a preferred cheese by lactose-intolerant people.
PREPARATION AND PAIRINGS
Because the Caseificio 3B Latte Caprino di Capra comes in a roll, it’s easily servable on cheese boards. You can drizzle it with some extra virgin olive oil, like this one from Bodega Nekeas. You can even mix it with some pesto, and spread on bagels, toast, or crackers.
Use it as an alternative to cream cheese for your dips, or an alternative to sour cream for baked potatoes.

They began specializing in classic Lombard cheeses, using raw materials from the area. Utilizing traditional techniques and more modern production processes, Caseificio 3B Latte creates incredible cheeses that are healthy, delicious, and top quality.
Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging.
