With a beautiful cream color, dotted with bright orangey-yellow mango bits, the Malagos Mango Sublime is one to behold. Done in the style of chevre, this lactic acid cheese is made from a blend of pasteurized cow and goat milk. Made fresh, it is always cloth drained and hand molded, and very lightly salted.
The Malagos Mango Sublime is a sweet cheese, owing to the prominent bits of delicious fresh Philippine mangoes interspersed within.
A perfect dessert cheese, it will go well as a meal-ender. Or a sweet snack, should you have the craving for something different and delicious.
Pair it with a sparkling wine, like this fruity Chardonnay to round out your treat.
The star of the Malagos Mango Sublime is definitely the mango. Philippine mangoes are an institution in itself, reputed internationally for its delicious flavor, and listed as the sweetest mango in the world in 1995 by the Guinness Book of World Records.
Myths have surrounded the mango’s heart shape. One such story involves a sweet boy who was loved by everyone for how kind and helpful he was. He developed a terrible sickness, without anyone knowing how to cure him. Despite his parents caring for him, he got worse and eventually succumbed.
His parents, and the village, were distraught. A Diwata appeared to his parents as they buried him, asking for his heart. She buried the boy’s heart atop a hill, and there sprouted a tree that grew beautiful sweet golden fruit shaped like hearts.
Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging. This cheese should be stored in a lidded plastic or glass container in the refrigerator. Kindly pay attention to the best before date label when you receive your cheese. Consume prior to date indicated.
