In this fertile region of rolling hills where great wine and cheese are produced, the truffles grow beautifully large around the roots of oak, poplar, and linden trees. Often considered less intense in aroma and taste than their black counterparts in Périgord, France, Alba white truffles (tuber magnatum) are desired for their own unforgettable flavor. They tend to look knobby and possess firm flesh with a pale golden color. They can grow as large as 9 cm in diameter, possessing a pleasantly pungent aroma and deep, earthy flavors. Their centers have a lovely brownish cream color with delicate white veins.


You only need a little of this truffle in a dish. White truffles are best used fresh, not cooked, and the simplest dishes showcase their full depth of aroma and flavor. Using a truffle shaver instead of a regular peeler or a knife gives you paper-thin slices that bring out the most flavor. Alternatively, you can use a microplane to get smaller slivers, depending on your recipe. Most dishes only require about 10 grams of truffle per person.

Alba white truffles go best in fat-rich dishes like cheese fondues, egg dishes, or even beef carpaccio seasoned with only olive oil, salt, and pepper The traditional way to serve white truffle in Piedmont is shaved over tajarin, an egg-pasta similar to angel hair, topped with melted butter. Some Italian chefs even shave it over panna cotta.


The International Alba White Truffle Fair enters its 90th year in 2020, with the Alba White Truffle World Market at its heart. Here, you can buy truffles from the Langhe, Monferrato, and Roero areas around Alba. Also part of the fair is the Alba Truffle Show, where great chefs showcase new recipes as wine tasting experiences and general truffle education are offered to the patrons.

For the best taste and quality, consume fresh truffles within 2 or 3 days of their arrival. If you need to store them longer, gently wrap the truffles in paper towels and place them in a dry, sealed container like tupperware or a glass jar. Keep the container in the crisper compartment of your refrigerator (no lower than 3°C) for up to one week.
