This saucisson does not come with skin or casing but is enjoyed just as much as any saucisson. The addition of Roquefort cheese gives the taste of this saucisson a more rustic and complex flavor.
The shape of this saucssion as compared to the long “sausage style” shape gives an extra edge when served in your apero platter. In itself the Saucisson sec Le Pavé with Roquefort is good on its own. Best paired with your preferred Bordeux red. Blends of Cabernet Sauvignon and Merlot or even a mature Cabernet would be a great partner.
