TASTING NOTES FROM THE CURATOR

Especially popular in Asia, the Blackbutt Honey comes from the Blackbutt Eucalyptus tree in Western Australia. This is a tree that usually grows in moist soils, like those near rivers. This Blackbutt Honey is TA15+, where TA refers to Total Activity. TA relates to the anti-microbial quality of Western Australian honeys, where the higher the TA, the stronger the anti-bacterial and anti-microbial properties.

The A Buzz from the Bees Blackbutt Honey TA15+ has a dark amber, almost black, color. it’s sustainably sourced, and contains no preservatives or additives. It has a full-bodied, rounded flavor, strong but sweet.

PREPARATION AND PAIRINGS

A Buzz from the Bees Blackbutt Honey TA15+ is great to drizzle on your waffles and pancakes. It’s also wonderful for your oatmeal, overnight oats, and yogurt bowls. Serve it alongside pear and apple slices, some fresh bread, and soft cheeses for a great appetizer.

A Buzz from the Bees was established in 2010 by Kim Cheeseman, an avid beekeeper. His beekeeping career truly began at eight years old, when he and his father found an abandoned beehive on a roadside. He helped his parents sell honey at the local market, and this kickstarted his vision to share the pristine harvest of honey they would get each year to the rest of the world.

They use no additives, no pesticides, no chemicals, or preservatives. Today, A Buzz from the Bees exports honey, honeycombs, and balms all over Australia, Asia, and the Middle East.

Storage Instructions

Keep your honey in a cool location away from direct sunlight and make sure the container is tightly sealed. The ideal temperature for storage is from 13 to 21°C. Some manufacturers will set the expiry date of their jars at two years after the bottling date. However, honey can last decades or even centuries if stored properly. It may change color and become crystalized, but it will stay safe to eat. If your honey does crystallize, just place the open jar in warm water and stir until the crystals dissolve. Store in a cool dry place.
