Very young and soft, the Brillat-Savarin is a classic cow milk cheese from France. It’s luscious and creamy, with a wonderfully fresh flavor.

TASTING NOTES FROM THE CURATOR

This Fresh Brillat-Savarin is also referred to as “non-affiné,” which means “unripened.” It’s the very young, uncooked, unpressed version of our other Brillat-Savarin, but no less incredible. This decadent triple créme cheese is dense and creamy, with a buttery, salty flavor. Very rich and luscious, it has notes of nuts, truffles, and mushrooms.

BELOVED BY THE FROMAGERS

“Dessert without cheese is like a beauty with only one eye,” said famed 18th-century gastronome—and physiologist—Jean Anthelme Brillat-Savarin.

Over a hundred years later, highly regarded fromager Henri Androuet named his creation, which was based on the earlier Excelsior cheese, after this titan of the gourmet world. Fitting, for its rich flavor that is fattier than Camembert and much creamier than Brie. It stands on a pedestal of its own. It brings to mind another of Brillat-Savarin’s endearing food quotes: “The discovery of a new dish confers more happiness on humanity than the discovery of a new star.”

Storage Instructions

Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging. This fresh cheese should be stored in a lidded plastic or glass container in the refrigerator. Kindly pay attention to the best before date label when you receive your cheese.
