Sher¬≠ry vine¬≠gar from this region has a long his¬≠to¬≠ry and is sought after because it is tight¬≠ly con¬≠trolled by both Span¬≠ish and EU law. It has a dry¬≠er, less syrupy taste than bal¬≠sam¬≠ic vine¬≠gar, and can be aged any¬≠where from 6 months to 75 years. The old¬≠er the bot¬≠tle, the more intense its flavor.
