The best milks are seeded carefully with lactic cultures, then rennet is added to trigger the curdling of the milk. These curds are then left overnight at specific temperatures before the whey is decanted. This draining process is traditional, and is slow and gentle, preserving all the character and texture of the fromage frais.
It has a silky and luxurious texture, soft and creamy. It has a very mild flavor, almost tasteless, making it very versatile.
PREPARATION AND PAIRINGS
Cottage cheese is adaptable, and you can use it in a wide variety of ways. Use it in your pancake and waffle batter instead of milk. Another breakfast option is topping it with granola, and drizzling it with honey.
Spread it on your toast and bagels, or crumble it over your salads. You can even put it in your scrambled eggs to give them an extra creamy texture. Or you can eat it like you would yogurt, and flavor it with fruit.
