Tasting Notes From The Curator
Ortiz prepares Southern mackerel, Scombrus colias, with the same attention usually reserved for the most celebrated tuna cuts. After cooking, each fillet is cleaned carefully by hand. The darker bloodline is removed, leaving neat, pale fillets that are then packed methodically in olive oil. This work gives the fish a cleaner flavour and a particularly delicate texture.
Mackerel is naturally savoury and full-flavoured, yet the Ortiz style keeps it poised. The olive oil softens the fish's intensity and gives the fillets a velvety, succulent finish. Their texture is tender but substantial enough to hold together on toast, in salads, or alongside vegetables.
