Terre Exotique Fleur de Sel Madagascar 1kg

Pure and immaculate

Fleur de sel which translates to “flower of salt” in French is a salt that forms as a thin, delicate crust on the surface of seawater as it evaporates. Fleur de sel has been collected since ancient times as a salve. It is now used as a finishing salt to flavor and garnish food and is highly favored by foodies and big-time chefs across the world. The name comes from the flower-like patterns of crystals in the salt crust.

Tasting Notes from The Curator

Fleur de sel is one of those small but indispensable touches, like good quality olive oil or fresh herbs, that changes an ordinary meal into a culinary experience. You may not want to use it every single day, but there are certain dishes that will be markedly improved when you do.

Fleur de sel typically has a grain size between 0 and 4 mm. It is harvested manually from the top layer of the salt pan and is not processed afterwards. It is dried naturally. As a result, production is considerably limited. This explains why this type of sea salt is relatively expensive compared to coarse sea salt.

Its moist and soft grain structure are what sets fleur de sel apart, making it unsuitable for salt mills. Fleur de sel gets its unique structure and characteristic soft taste from its high mineral content (calcium and magnesium). Chefs often turn to fleur de sel to add a finishing touch to their dishes.

Preparation

Because of its delicate nature and higher price relative to other salts, fleur de sel isn’t meant for seasoning a dish while you cook it. In no way should this salt be included in the cooking process. If you expose it to high temperatures, it will melt and lose its unique character.

Fleur de sel is meant as a garnishing or finishing salt.

Sprinkles of fleur de sel on anything that needs a little extra oomph right before it’s consumed: eggs, salads, fish, meat, fruit, vegetables, and dessert that involves chocolate and caramel.

A Taste of the Indian Ocean

It is a general rule that the less refined or processed the salt is, the larger the proportion of minerals and moisture. By definition, Fleur de sel is the most complex in flavor.

Due to its natural processes from ocean to your tables, Fleur de Sel is regarded as the saltier of salts. Using this immediately delivers flavor to the taste buds.

No wonder Fleur de sel has a reputation for tasting like the ocean.

Chemistry might also explain the salty-sweet craze that’s put Fleur de sel on the map. Salt not only enhances the flavor of ingredients like caramel and chocolate, it inspires a chemical reaction in our bodies.
