David Moreau’s Santeney Cuvee S is mad with hand-picked and carefully sorted Pinot Noir Grapes, aged in oak barrels. It’s a full-bodied wine, with an ABV of 13%. On the nose, you get a floral bouquet, with notes of dark berry and blackcurrant. It’s well-structured on the palate, with notes of blackberry, blueberry, and a subtly saline finish.
This Burgundy red wine is great to pair with meat—chargrilled steak, roast lamb, veal, meat-based pastas, you name it. It’s also great to enjoy with roast duck, hearty stews, or lamb biryani.
Born to a winemaking family, David Moreau studied in Beaune and Dijon. But when he returned, he and his grandfather had disagreements about winemaking ideologies, so he decided to get experience elsewhere. He worked with Olivier Lamy, and at Domaine de la Romanee-Conti, and even in the Neudorf Vineyards of New Zealand. When his grandfather was at the cusp of retirement, he agreed to go back and take over. But he would only do so on one condition—that all of the decisions would be his. His grandfather agreed, and he took the reins. One of his first changes was making the switch to organic farming, and longer and slower elevages. His wines are the perfect entry-level Burgundy, with bright fruity flavor and acidity. Though still young, David Moreau is definitely a winemaker to watch.
Store unopened red wines in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 16 to 18°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
