Michel Cluizel milk chocolates receive the same long, careful processing as the company’s dark chocolate variants to maintain that trademark smoothness in all flavors and intensity levels of the bars — all with a touch of caramel to the taste.
- The Grand Lait 45% Éclats Caramel Beurre Salé (Milk Salted Butter Caramel) bar balances just the right level of cocoa with salted butter and brown caramel notes to titillate the senses.
- The Plantation Mangaro Lait 50% (Milk 50%) bar combines a deep caramel flavor with notes of gingerbread, honey, exotic fruit, and sultanas.
- The Plantation Riachuelo Lait 51% (Milk 51%) bar plays up cream and caramel laced with red fruit and cocoa for a spicy, fresh finish that lingers long on the palate.
PREPARATION OR PAIRINGS
Milk chocolate is at once remarkably diverse and tricky to pair with. The secret is in the balance and quality of ingredients. Michel Cluizel teases out the purest chocolate taste out of his bars, making each one a treat on its own or with any fresh accompaniment. Nuts, ginger, and citrus balance out the milky taste and play well with the caramel notes. Try them with avocado ice cream or a young Asiago cheese fresh off a cheese board. If you prefer to indulge with a little wine on the side, the Grand Lait 45% pairs well with a Valpolicella, Banyul, or Pinot Noir — but if you’re savoring a whole selection of milk chocolates, the semi-sweet, light body of a Riesling or Muscat is a more all-encompassing match.
FROM A TREND-SETTING CHOCOLATIER
Michel Cluizel produced his first Grand Lait bars long before high-cacao content milk chocolate drew the palate away from the sugarier variants. At the time, his efforts were underappreciated, but that did not stop him. From the original run of Grand Lait Cacao Pur Ile de Java 55%, he and his company crafted less intense cocoa percentage bars. Today, Michel Cluizel milk chocolates are eye-openers to even the greatest of milk chocolate skeptics.
