Rillettes refers to a special kind of preparation of meat that makes in similar to a pâté. In this case, duck meat, often coming from legs or wings, are dry-brined and braised in a special stock then shredded and flavored further with spices. The result is a delicious meat spread that can work easily with bread and a variety of hors d’oeuvres.
The Castaing Duck Rillettes is made exclusively from duck meat in confit, without any pork or preservatives.
Duck Rillettes are ready to eat and can be spread over toasted country style bread or a baguette. This can be complemented with onion jam or crunchy pickles on the side. You may also use this in your sandwiches or serves as part of the charcuterie board.
This makes a great pairing partner with Cabernet Franc or a good Pinot Noir.

Based in Landes, a few kilometres from the hometown of its historic founder Joseph Castaing, this company attentively subscribes to the culinary tradition of South West France. Masion Castaing has always chosen to work in close collaboration with small local farms (non industrial) that perpetuate the traditional duck breeding and rearing outdoor with a 100-percent natural diet for the best foie gras duck (mulard duck). Fattening is traditionally by hand and exclusively with French Southwest whole grain corn by respecting the very strict procedure of “Label Rouge” Landes certified production. The Label Rouge programme focuses on superior quality and gourmet taste of products following a set of strict and comprehensive standards.
