Gindara or Black Cod is a popular fish because of its high amounts of healthy fat and omega-3. Ours come from the United States, and processed in Sanriku, Japan. It’s center-cut, bone-in, and frozen. It has a pearly white flesh that turns golden-yellow when smoked. Its texture is firm, with large, delicate flakes. It has a rich flavor, buttery and sweet, and filled with umami.
Enjoy the Sanriku Gindara Center-Cut as Miso Gindara, or sauteed in butter. it’s also great baked, poached, broiled, and pan-fried. And of course, this fatty fish is perfect for smoking.
The Sablefish, or Black Cod has a diet of primarily other sea animals, such as jellyfish, pollock, and squid. It has a very long and very impressive lifespan, reaching to around 90 to 94 years. It is sometimes referred to as “butterfish” for its rich flesh. And the name “Sablefish” is thought to have come from the feel of its very small scales—almost velvety, akin to a sable’s fur.
