Gindara or Black Cod is a popular fish because of its high amounts of healthy fat and omega-3. Ours come from the United States, and processed in Sanriku, Japan. Itâs center-cut, bone-in, and frozen. It has a pearly white flesh that turns golden-yellow when smoked. Its texture is firm, with large, delicate flakes. It has a rich flavor, buttery and sweet, and filled with umami.

The Sablefish, or Black Cod has a diet of primarily other sea animals, such as jellyfish, pollock, and squid. It has a very long and very impressive lifespan, reaching to around 90 to 94 years. It is sometimes referred to as âbutterfishâ for its rich flesh. And the name âSablefishâ is thought to have come from the feel of its very small scalesâalmost velvety, akin to a sableâs fur.
