The Lafitte Pâté with Espelette Pepper is a pork and duck pâté with a smooth, rich taste and texture. It is beautifully spreadable, and has all the classic flavor characteristic of pâté. The Espelette Pepper originated in Central and South America, but it was the Basque country (who adopted it in the 16th century) that made it its own—so much so that it was given an AOC in 2000, and an APO in 2002.
Known as “piment d’espelette” in France, they are grown in Espelette, a French commune in Pyrénées-Atlantiques. They grow to about six inches long, and has a color range of green to a vivid red. This pepper is so important to the region that they hold an Espelette Pepper Festival on October every year.
The flavor is fresh and fruity, with only mild hints of heat, with only score of 4000 on the Scoville Scale.
Store unopened containers of pâté in a cool, dry pantry for up to 4 years. Once opened, pâté will keep three to four days in the refrigerator. It can also be frozen for up to two months, though we recommend you consume it as soon as possible!
