A "mendiant" is a traditional French sweet treat composed of a chocolate disks studded with nuts and dried fruits representing the four mendicant or monastic orders. Michel Cluizel brings their version of a Mediant in bar form. This Michel Cluizel Dark 72% chocolate explores a rich confection with the addition of sweet dried and candied fruit.

TASTING NOTES FROM THE CURATOR

Michel Cluizel is known for its quality chocolate, owing to the complex and detailed processes they use, and the passion for their craft that is noticeable in every product.

This block of chocolate has a high cocoa content—72%, and uses only the best cacao beans. it’s bitter and chocolatey, but that bitterness is balanced wonderfully by the addition of dried fruits and nuts. The result is sweet and tart, with nutty notes and delicately spicy hints. This is a very harmonious chocolate.

The Mendiant is usually produced during Christmas, where nuts and fruits added to recipes are most prominent. Enjoy this treat during the holiday season!

PREPARATION AND PAIRINGS

The Michel Cluizel Dark 72% & Dried and Candied Fruit is a perfect snacking chocolate, great for any time of the day. It’s particularly great for after a savory meal, to balance it out with a little sweetness. Pair it with a glass of Port, or a cup of strong black coffee.

THREE GENERATIONS OF CHOCOLATE EXCELLENCE

The Cluizel family’s affair with chocolate began in Normandy in 1947, when pastry chefs Marc and Marcelle Cluizel decided to venture into this line of confection. Their son Michel took their interest a step further and, in 1987, opened the now-famous La Fontaine du Chocolat on the Rue Saint Honoré in Paris. He insisted on only the best quality sugar cane and Bourbon vanilla pods in his products, and eventually began partnering with cacao plantations around the world. The rest, as they say, is history.

Storage Instructions

Store your chocolates in a cool, dark place, ideally between 18 to 24°C. You can use the refrigerator, but place the chocolate in an airtight container to keep the moisture and humidity out—and retain its full range of flavors, of course!
