Saint-Félicien also known as St Felicien or Saint Felicien is a soft raw cow milk’s cheese that is slightly creamier and richer than another French cheese favorite, Saint Marcellin.

This cheese takes 2 to 6 weeks to mature and as a result it develops a bloomy rind and natural golden-beige color. Its peak of aging is about 4 to 6 weeks wherein, by this time, it has reached its optimal flavor and is perfect for consumption.

Its flavor profile lies on the buttery and creamy side. Hints of fruit and nut are also around. On the nose, this cheese has a strong mushroom-like aroma.

Pairings

Cheese afficionados favour Saint-Félicien with a chilled Sancerre or Pouilly Fume. You may also opt for a Cotes du Rhone or your preferred fruit-forward red.

A Dauphinois Cheese

In France, Saint-Félicien is designated as a dauphinois cheese as it refers to it originating from the former French province Dauphiné that lies in the southeast which is significant for its historic and cultural contributions to France.

Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging. Soft cheeses with delicate rinds need to breathe, so they are best placed in glass containers lined with paper towels to absorb extra moisture. Leave the lid open a tiny bit for air to circulate and don’t forget to write up a label with the date you first opened the package.
