Made in the C√īte d‚ÄôOr, √Čpoiss¬≠es has climbed to the top of gourmet delight in France over and over thought the cen¬≠turies and is known to be at once a strong and del¬≠i¬≠cate cheese. 


From a region famed for its cheese and wine, the √Čpoiss¬≠es tru¬≠ly embod¬≠ies the best of the region. This farm¬≠house-style cow‚Äôs milk cheese is washed with marc de Bour¬≠gogne, a pomace brandy that gives it its sig¬≠na¬≠ture pun¬≠gent aro¬≠ma. It is aged for at least 6 weeks, allow¬≠ing its rind to turn sticky and devel¬≠op a deep orange col¬≠or. Inside, the p√Ęt√© is a mag¬≠nif¬≠i¬≠cent¬≠ly creamy ivory to pale yel¬≠low col¬≠or, and it is so smooth that it melts in the mouth. Spice, salt, sweet¬≠ness, and a hint of a tang hit you straight on the palate. It comes in a wood¬≠en box to help pre¬≠serve its shape.

Once opened, they should not be kept in their orig¬≠i¬≠nal pack¬≠ag¬≠ing. Soft cheeses with del¬≠i¬≠cate rinds need to breathe, so they are best placed in glass con¬≠tain¬≠ers lined with paper tow¬≠els to absorb extra mois¬≠ture. Leave the lid open a tiny bit for air to cir¬≠cu¬≠late and don‚Äôt for¬≠get to write up a label with the date you first opened the pack¬≠age. Your cheese will be fine for up to one month.
