Parmesan Padano Grattuggia is Italian hard cheese in grated form. It does not require an origin certification such as that of a Grana Padano or Parmigiano Reggiano, but is processed similar to that of the DOP cheeses.
Tasting Notes from the Curator
Parmesan Padano Grattuggia is white-paste cheese that is uniform and semi-hard, which is produced with whole pasteurized Italian cow’s milk, good for both meal and grating. The processing is the same as for Grana Padano and Parmigiano Reggiano but is not marked by either of the two Protection Consortia. The product is free of lysozyme and vegetable rennet. It is aged for at least 9 – 10 months. It has a gritty texture and nutty in taste.
Parmesan Padano Grattuggia is mostly grated over pastas, used in soups and risottos. It is also eaten on its own as a snack..
For wine pairings, this cheese makes a great partner to light-bodied white wines with floral aromas that won’t overpower the cheese. Some recommendations are Moscato D’Asti, Gewurtztraminer and Riesling.
