The Avgvstvs Forvm Flavivs Reserva Vinegar is a limited production vinegar from Forvm Cabernet Sauvignon initial soleras of 20 years. It’s aged in oak casks inside “dry stone” barracks, which are located in the middle of their vineyards.
This bittersweet vinegar has a great character, unique and distinct. It has a dense texture, and caramelized, sweet honey notes, with a touch of tartness.
Preparation And Pairings
This red wine vinegar is perfect to drizzle of finish fish, poultry, and vegetables. You can also use it as salad dressing or marinade, as well as making a reduction. For an easy appetizer or snack, drizzle it over a tuna carpaccio or some sardines. Or serve it with Jamon Iberico and bresaola.
Switching Gears
The Roca family's vineyard in Penedès, west of Barcelona, produces Forvm vinegar. It began as a modest winery, but after tasting an old, abandoned barrel of wine and realizing what amazing vinegar the grapes created, the family switched gears. The thirty-year-old brand has developed a cult following, with its vinegars appearing on many Nobel Peace Prize banquet menus, and being utilized in some of the world's most prestigious kitchens.
