This rum by Don Papa was matured in the foothills of Mount Kanlaon, and has an ABV of 40%. It was aged in ex-Bourbon and ex-Rioja American Oak Casks for seven years, then blended expertly by a Master Distiller.
Light amber in color, it’s fresh on the nose, with zesty notes of roasted citrus, mango, and fresh strawberries. It balances out with aromas of spice and sweet oak. On the palate, it’s full-bodied and smooth, giving notes of mandarin orange, vanilla cream, brown sugar, ginger, and lemon zest. It has a soft, lingering finish with hints of dark honey and oaky spice.
You can keep it simple by enjoying the Don Papa 7-Year Aged Rum neat, in a small glass, warmed by your hands. You can also have it on the rocks, with a slice of lime of a little twist. The island of Negros is colloquially known as Sugarlandia, and it is here that we find the story of Papa Isio, one of the unsung heroes of the Philippine Revolution. Renowned throughout Negros, he was a revolutionary and a shaman, and the inspiration for “Don Papa.” Embodying the spirit of Sugarlandia—passion and grit, Don Papa honors Papa Isio with the sugar canes he once worked with.
Store your bottle upright in a cool, dark place, ideally between 12 and 15°C. Unopened bottles can last for an indefinite amount of time, but the closer you get to the bottom third of the bottle, please consume quickly to prevent oxidation and taste alteration.
