One thing that is quite noticeable with this rum is the complex layers of fruit and that developing dark character with sweet vanilla high notes. Besides being aged in bourbon and whisky casks, it takes its final year in Spanish sherry casks which give it a wonderfully oaky, dried-fruit finish. You can also sense the rich aromas of coffee, chocolate and tobacco. The palate offers soft notes of bitter chocolate, red fruit, creamy vanilla and caramel. This particular 2005 vintage is complex, well balanced and slightly less dry than the previous year.
This rum is an ideal rum taken neat as it already brings to palate a delectable array of flavors, enjoyable on its own. If you are enticed to have some food with this a dark chocolate such as the Valhrona Guanaja 70% Dark Chocolate will be nice to snack on. Similary, a strong cheese such as the Long Clawson Potted Blue Stilton would be a great pairing partner.
