TASTÂING NOTES FROM THE CURATOR
Baga grapes harÂvestÂed from clay-limeÂstone soils creÂate the typÂiÂcal BairÂraÂda wine flaÂvors. Through manÂuÂal harÂvestÂing at difÂferÂent times of durÂing the harÂvest seaÂson, the wineÂmakÂers at Vadio are able to conÂtrol the matÂuÂraÂtion levÂels present in their wines. ExtracÂtion is done very genÂtly, and the barÂrels for their tinÂto wines are aged for a minÂiÂmum of 18 months. This wine is fresh and delÂiÂcate on the palate, with an acidÂiÂty that shines perÂsisÂtentÂly, accomÂpaÂnied by soft, polÂished tanÂnins. It tastes of cherÂries and mixed berries, with a hint of stewed plum.
PAIRÂINGS
In PorÂtuÂgal, BairÂraÂda wines are the sinÂguÂlar partÂner for the nationÂal fish, bacalÂhau. These wines are also often drank with octoÂpus or squid in red wine sauce or fresh grilled tuna. If you preÂfer meats, this is an offal-friendÂly wine, espeÂcialÂly with kidÂney or livÂer. Vadio WinÂery grows about 70 perÂcent of their wines right in their vineÂyards, but because of high demand, they also take in Baga grapes harÂvestÂed from smallÂer growÂers in the area. Their goal is to be comÂpleteÂly self-sufÂfiÂcient by 2030. And theyâre not just big on proÂtectÂing their wines; Vadio also conÂtributes to the mainÂteÂnance of regionâs bioÂdiÂverÂsiÂty, carÂing for the surÂroundÂing floÂra and encourÂagÂing natÂurÂal, organÂic techÂniques in their vineÂyards to keep from polÂlutÂing the area.
Storage Instructions
Store unopened red wines in a cool, dry, and dark place safe from conÂstant vibraÂtion. Keep your botÂtle horÂiÂzonÂtal in a wine rack or celÂlar to retain the moistÂness of the cork. The ideÂal temÂperÂaÂture for storÂage is between 16 to 18°C. Once opened, a botÂtle will be good for 3 to 5 days standÂing upright in the refrigerator.
