This fresh uni is from Russia, and processed in Japan. This firm but buttery delicacy has a flavor that is bursting with briny umami.

TASTING NOTES FROM THE CURATOR

This fresh sea urchin is sashimi-grade, making it safe to eat raw. It has an orange, yellowing color, with a look that resembles a tongue. Its texture is firm but melts in your mouth, and is thick, rich, and buttery. Its taste is briny, and filled with umami with a pleasant sweetness.

PREPARATION AND PAIRINGS

Ori Uni or Ita Uni is a classic sushi and sashimi ingredient. But it’s also great in pastas, in donburi, and as tempura. Pair with a good sake, or a dry Riesling.

URCHIN MAGIC

In the olden days of Denmark and South England, they saw the fossils left behind by sea urchin as a sort of protective magic symbol, able to ward off the harm by witchcraft or lightning. They were also carried as amulets, with the belief that they were created from the foam of snakes by magic, and were able to protect the wearer from battle injuries, poisons, and heart and liver diseases.
