The Guimauve ( or marshmallow ) is a traditional French recipe that evolved with time. We can see descriptions of it in French literature since the 18th century. Antonio Menneghin, when he was chef in a restaurant, started to experiment with the base recipe of the marshmallow to innovate in terms of flavours, with his first trial with green peas. A few years later and many new combinations created, he opened his little artisanal shop, quickly becoming a reference in the confectionery world.
