Tast­ing Notes from the Curator

The Maboroshi Pinot Noir, a medi¬≠um-bod¬≠ied red, opens with invit¬≠ing aro¬≠mas of san¬≠dal¬≠wood and laven¬≠der accent¬≠ed with a touch of straw¬≠ber¬≠ry and licorice. Fine-grained tan¬≠nins and great struc¬≠ture are height¬≠ened by ripe red fruit fla¬≠vors and a hint of shi¬≠itake on the back palate. A sweet smooth but ele¬≠gant fin¬≠ish in every drink

Giv¬≠en its full-bod¬≠ied¬≠ness and high acid¬≠i¬≠ty, this Pinot Noir is best paired with nut¬≠ty & hard cheeses such as Gruy√®re and Pro¬≠volone, dry and salty cheeses such as Grana Padano, Parme¬≠san and aged Machego. From a Whim¬≠si¬≠cal Dream

The Maboroshi Vine¬≠yard, nes¬≠tled in the Sono¬≠ma Coast hills 600 feet in ele¬≠va¬≠tion, is one of the first spots to clear from the morn¬≠ing fog as ridges to the west shel¬≠ter the site from any lin¬≠ger¬≠ing marine lay¬≠er. Named ‚Äč‚Äúwhim¬≠si¬≠cal dream‚ÄĚ in Japan¬≠ese, this vine¬≠yard is the meet¬≠ing ground for oppo¬≠sites: warm sun¬≠light and cool fog, ele¬≠gance and structure. 

Whole berries from this vine­yard were fer­ment­ed in small open-top oak vats with hand punch downs, then bas­ket pressed to bar­rel for sec­ondary fer­men­ta­tion on the lees. The wine was aged for 13 months in 33% new French oak and 67% in sec­ond-fill bar­rels to lend soft­ness to the oak characteristics.
