The Cousiño-Macul Cabernet Sauvignon offers a symphony of flavors for the curious palate. The initial bouquet greets you with intense aromas of bold blackberries and juicy cherries, giving way to a subtle hint of oriental spices, vanilla, and tobacco. Its complexity stems from the unique climate of the Maipo valley, with the Andean sun baking the ripe, black fruits during the day and cool mountain breezes preserving their acidity at night. Irresistible flavors of dark cherries and dark chocolate layer across your palate, with characteristic notes of oak lurking in the background. The tannin orchestra finishes with a smooth and velvety flourish, paving the path for a memorable, lingering finish. The sheer majesty of the old vineyard shines through in every sip, marking the wine’s uniqueness within its category.
What makes the Cousiño-Macul Cabernet Sauvignon truly remarkable is its consistency in embodying the rich history and heritage of Chilean winemaking. Founded in 1856 by MatÃas Cousiño, Cousiño-Macul is one of Chile’s oldest wine-producing estates. What is even more remarkable is how the winery has remained in the hands of the original founding family for six generations, despite the test of time and the whims of changing markets. In 2010, the devastating earthquake that struck Chile caused significant damage to the winery. However, just as they’ve done since their founding, the family rebuilt, vowing to continue producing their wines and maintaining their high standards of quality. Their commitment to tradition, sustainability, and to their heritage-rich terroir make for a fascinating tale with every glass poured.
Store this wine in a cool place, with a consistent temperature of around 55°F (13°C). Ensure the wine is protected from direct sunlight, and maintain a humidity level of around 70%. Always store wine bottles horizontally to keep the cork moist and prevent any unwanted air from entering. The wine should also be stored away from any strong-smelling foods or substances that may affect its flavours.
