The roast¬≠ing is done in three phas¬≠es: dehy¬≠dra¬≠tion which elim¬≠i¬≠nates the humid¬≠i¬≠ty, then the roast¬≠ing, and final¬≠ly the cool¬≠ing process, which is done at room tem¬≠per¬≠a¬≠ture. This is the phase in which the cof¬≠fee acquires all of its aroma.
