A balanced chocolate couverture, the Valrhona Dark Equatoriale is soft and round in flavor, and creamy and balanced in texture. It contains 55% cacao, 43% sugar, and 37% fat. It’s a classic Valrhona dark, with rich chocolate taste and vanilla notes.
These beans are very easy to melt, so they’re perfect for molding, coating, and making bars. Use them to make mousse, cremaux, ganache, ice creams, sorbets, and pastries. They’re also great for chocolate filling, or chocolate icing or frosting.
