The Sylvain Pataille Bourgogne Rouge is made with 100% Pinot Noir grapes, fermented in whole bunches, vinified in steel and vetresina containers, and aged in barriques for more than two years. A bright Burgundy, it has a deep ruby color, and an ABV of around 13%. Elegant, structured, and aromatic, it has notes of ripe cherry and raspberry, and earthy, herby hints.
This elegant red wine from Sylvain Pataille is great to pair with cured meats and cheeses. It’s also wonderful with roasted winter squash, and garlic butter mushrooms. Try it with lamb burgers, or any meat-based pasta.
Sylvain Pataille has a relationship with wine that spans his whole life. His was not a family of vignerons, but his childhood was spent amongst the vines. His father, a bus driver, spent some afternoons helping his vigneron friend, bringing along Sylvain and his brother, Laurent. And every summer, they would visit their paternal great uncle’s domain in the Médoc. Sylvain grew up around wine and vines, and he knew that winemaking would be his career.
He attended school in Beaune for winemaking, studying, training, and learning all he could to fully prepare himself for his dream. Barely out of school. He started his own domaine in Marsannay, a village in the Côte de Nuits. He began in 1999 with only one hectare to his name, and steadily grew it to its current 15 hectares.
Aside from being a renowned vigneron, he is also consulting oenologist to some of the most illustrious domaines in the region. He has also become a leader in biodynamic and organic viticulture. All of his expertise has rendered him one of the most important figures in Burgundy.
Store unopened red wines in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 16 to 18°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
