The secret is in a blend of washed Central American and unwashed South American beans. The unwashed coffee provides strength and body, and the washed beans bring in the right amount of acidity and sweetness for a truly remarkable coffee with notes of toffee, honey, and caramel.
This coffee blend is beautiful as either an espresso or with a splash of hot foam. For the budding home barista, it’s best to brew medium-dark roasts in water between 87 to 93°C. Remember, the darker the bean—whether in whole or ground form—the more porous it is, and the less heat you need to pull the flavors out. Store your coffee in an opaque, odor-free, airtight container in a dry, dark place at a cool room temperature. It’s best to consume coffee grounds within two weeks. Freshly roasted whole beans retain their freshness for up to one month.
