TASTING NOTES FROM THE CURATOR

The Mons Bundle is a bundle perfect for those chill nights where you just want to relax with some good cheese, and some good wine. This bundle contains our Mons Cheese Box, a selection of some of the tastiest cheeses. It also includes Tartufi Morra Black Truffle Honey, Sourdough Bread, and a bottle of red wine in the form of the Aspirant de Beychyvelle. It’s creamy, rich, and best of all, convenient.

PREPARATION AND PAIRINGS

Serve The Mons Bundle as starters, or as a nice snack with good company. Take a slice of the sourdough bread, top it with your choice of cheese, and drizzle a bit of the truffle honey over it. Enjoy with a glass of the red wine. Delicioso!

Storage Instructions

Cheeses (except brined ones in jars) should be stored in the crisper or the butter drawer of a refrigerator, not on the shelves themselves. This is to help regulate their temperature and humidity levels—and prevents the formation of mold. Once opened, they should not be kept in their original packaging. Soft cheeses with delicate rinds need to breathe, so they are best placed in glass containers lined with paper towels to absorb extra moisture. Leave the lid open a tiny bit for air to circulate and don’t forget to write up a label with the date you first opened the package. Kindly pay attention to the best before date label when you receive your cheese. Consume prior to date indicated.

Keep your honey in a cool location away from direct sunlight and make sure the container is tightly sealed. The ideal temperature for storage is from 13 to 21°C. Some manufacturers will set the expiry date of their jars at two years after the bottling date. However, honey can last decades or even centuries if stored properly. It may change color and become crystalized, but it will stay safe to eat. If your honey does crystallize, just place the open jar in warm water and stir until the crystals dissolve. Store in a cool dry place.

Bread is baked fresh on morning of expected delivery day. Best consumed upon arrival, but you can store it on the kitchen counter at room temperature for up to two days. If you’ve sliced into it, you can leave it cut side down on the chopping board. You may also place the sliced loaf in a ceramic bread box or a clean paper bag. Never store bread in the refrigerator, or else it will dry out. By the third day, you can place the bread in a large Ziplock bag, but please note that the crust will soften and your bread will require toasting to refresh it. For storage up to three months in the freezer, wrap your bread in parchment paper and place it back in the Ziplock bag.

Store unopened red wines in a cool, dry, and dark place safe from constant vibration. Keep your bottle horizontal in a wine rack or cellar to retain the moistness of the cork. The ideal temperature for storage is between 16 to 18°C. Once opened, a bottle will be good for 3 to 5 days standing upright in the refrigerator.
