About The Kit

The Holiday Steak Kit celebrates contrast and restraint. At its centre is the Black Baltic Tomahawk by Metzger—a thick-cut, bone-in steak prized for its deep beef flavour, generous marbling, and impressive presentation. Paired simply with Échiré Butter AOP, it delivers richness without excess.

To balance the main, fresh French endives are paired with shaved Comté aged 24 months. The bitterness of the endives and the nutty depth of the cheese create a clean, refreshing salad that cuts through the steak’s richness. Corsican clementines complete the meal as a light, fragrant dessert—sweet, juicy, and effortless. Together, these elements create a Christmas meal that feels bold yet composed, indulgent yet fresh.

How to Serve

Main — Tomahawk Steak with Échiré Butter

Remove the steak from the refrigerator at least 45 minutes before cooking. Season generously with salt.

Cook over a hot grill or heavy pan, turning occasionally, until well-seared and cooked to medium-rare or medium. Allow the steak to rest for 10–15 minutes before slicing.

Finish by spooning Échiré Butter AOP over the hot steak just before serving, letting it melt slowly into the meat. Serve sliced, family-style, as the centre of the table.

Salad — Endives with Shaved Comté

Slice endives lengthwise and arrange on a platter. Shave Comté aged 24 months generously over the top. Dress lightly with olive oil, salt, and freshly cracked black pepper. This salad is meant to be crisp, clean, and refreshing—a counterpoint to the richness of the steak.

To Finish — Corsican Clementines

Serve the clementines whole or peeled and segmented. Their natural sweetness and citrus oils offer a light, aromatic end to the meal, refreshing the palate without heaviness.
