Conservas La Brújula is a purveyor of some of the finest preserved seafood in the world. They only source their seafood from Galicia, like these sardines, or the Cantabrian Sea.

TASTING NOTES FROM THE CURATOR

From the plankton-rich waters of Galicia, only in the months of June to October, La Brújula chooses the highest quality of the fishermen’s catch. The sardines are cleaned and hand-filleted by gloved workers in a temperature-controlled environment. No machines are used for the cutting of the fish or the packing of each individual tin. The meat is dense, oily in texture, but less salty than anchovy. It is preserved to the point that it flakes easily with a fork—ready for cooking or consumption.

PREPARATION OR PAIRINGS

Humble but delicious fare, sardines are a versatile addition to your pantry. Lay flaky pieces on crackers with a little mustard or pepper, sauté fillets with garlic, onions, and tomatoes, or toss the whole can into a salad. Other fun uses for sardines are filling for stuffed peppers or as a part of a lovely blended dip—or even a pesto.

TECHNOLOGY AND CRAFTSMANSHIP

Though the company takes an artisanal direction in the handling of their products, they do employ the most advanced technology to control the cooking time and temperature of all their seafood. They sterilize at the lowest possible temperature and employ experienced personnel to supervise every facet of work, to adhere to the strict guidelines of the European Union.

Storage Instructions

Store your tin in a cool, dark, and dry pantry. Unopened, it will last up to 2 years. Once opened, consume your fish within one or two days and keep leftovers with the oil in a sealed container in the fridge.
